What is wrong with people? Ok, maybe not wrong with them, but what are they thinking? I have a friend request on Facebook from my relative's colleague's daughter. Brutal honesty? We hung out once cuz she had a crush on my boyfriend's friend, who tried to get me to break up with my boyfriend so I'd date him. She doesn't live in the same state as me... haven't really spoken to or seen her for years. Obviously my sweet spirit effected her as much as it did my boyfriend's friend.
AAAAaaannnddd one from my companion in the MTC. Sure we lived together for 2 months, pretty much 24 hours a day. But she didn't particularly care for me bunches back then. I, on the other hand, thought we were just the loveliest peas in the pod. I just loved the wedding announcement I got in the mail. Oh, wait...I didn't get one? Lost in the mail most likely. I'll get it in a few years. Probably the carriers honest mistake. It's been what, 40-50 years since then.
I know what you all must be thinking, people on Facebook:
WE ARE NOT FRIENDS
You are thinking maybe their friend numbers were down, they are bored housewives and work worn husbands now with no outlet to make new friends or live even semi-exciting lives (sorry azucar, there are exceptions).
I think you may just be sorely mistaken. I have come to realize that I have had a much more profound, uplifting and life changing effect than even I thought. My affable wisdom, my devil-may-care charm, my fetching looks, my enchanting savoir faire and above all else my innate humility have given to all the gift of my association.
Or maybe they all just found out I had scarlet fever as a child and are finally offering me their undivided support and caring. Thank you, much appreciated.
Peas in the (MTC) Pod-Variation of Spanish Pollo con Nata
2 chicken breasts
2 cups peas
1 cup onion (smaller medium onion)
1 1/2 cups mushrooms
3/4 cups milk
3 Tbl. evaporated milk
1/4 tsp fresh grated nutmeg, a bit more if using store-ground
dash granulated or powdered garlic
Season chicken with salt, pepper, granulated garlic and a grating or pinch of nutmeg. Brown in saute pan at high temperature with spritz of olive oil. The chicken should be semi-raw in the middle. Quarter and slice onions, thick slice mushrooms and add to chicken with remainder of nutmeg. Let sizzle for 1/2 minute. Lower temperature and add milk and evaporated milk. When onions and mushrooms are almost done (onions should be soft and getting transparent while the mushrooms get darker and much smaller) add peas. Heat peas through, check chicken for done-ness and voila!
Those who are watching their carbs: this can be eaten by itself and is very filling.
Can be served over wide noodles or rice.
Those who are looking for those beautiful wondrous giving calories: SKIP the milk and evaporated milk and cook in straight cream. Much more thick and sumptuously delicious.
